This side dish is one of the most easiest things you could make. If you’re like me you’ll love a cheeky Nando’s trip from time to time, however since I’m a student and often short on time and money, I decided to make my own Nando’s at home. This is a cheap, yet delicious and cheerful alternative to their rice portion. Its full of flavour with just the right amount of spice, and trust me, I’m not good with spice at all, ironically. Once you make this dish you will never go back to plain old white rice again! Nando’s eat your heart out!
For the ingredients you will need…
1/4 Green bell pepper
1/4 Red bell pepper
1/4 Orange bell pepper
2 spring onions
A few sprigs of Parsley
4 garlic cloves
1/2 tsp Paprika
1/2 tsp Black pepper
1 tsp Salt
1 tsp Garlic powder
1 tsp Season all (reduced salt)
1 tsp Season all spicy
1 1/2 tsp Chilli flakes
1 Can of chopped tomatoes
2 Cups Water
Knob of butter
Long grain rice (Portion depends on how many people you’re feeding.)
These seasonings can be optional but i would suggest you use these for maximum flavour!
Dice ingredients then place into a pot with olive oil, large enough for your rice portion. Fry the peppers, spring onion and garlic in olive oil until soft then gradually add seasonings until fragrant.
Then add the chopped tomatoes and let simmer for 3-5 minutes before adding the rice.
Make sure you rinse rice thoroughly before cooking, you want to make sure the water runs clear getting rid of all the starch in the water.
Once the rice is clean add to the pot and stir ensuring the ingredients are all mixed in. Once mixed add in 2 cups of boiling water for the rice to absorb, add in the knob of butter then let simmer until rice is done.
